Eric's class was a lot of fun. It was a little big. 15 people, but we all got to participate. He was funny, informative and helpful. Looking forward to taking another class in the future.

Eric is kind and knowledgeable - works very hard! Lovely staff. Would have liked to do more and to understand more of the history or chemistry behind making bread. Would have liked more variety in the breads. Would have liked more options for making fresh bread after work (what can I freeze or yeastless / non-rising options).

I wish there was more one on one coaching. It seemed there was too much to be done and it became it but hectic and difficult to follow. Was pleased with the recipes given and opportunity to ask lots of questions of Chef Eric.

We learned so many breads in the span of 3 hours. If you have failed in bread making as much as I have, what was key for me was the kneading techniques and texture of bread as we move forward to every step in the process. Also, the ever frustrating over proofing bread and solutions to proof your bread for all climates are in itself worth taking the class.
