I just personally feel that for people like me (beginners), it would have been nicer if the class was in two sessions - Day 1 Making the dough and doing some baking Day 2 Baking the bread. But no complaints overall great experience.

I can't believe I made bagels.
As a novice this was very challenging but Eve was very comforting and she was able to help all of us who were on different levels.

Instructor was very kind! I think it was too advanced for us even though we’re pretty great home cooks. I think focusing on one dumpling filling, the dough and crimping style would have been better suited for us. Things felt fast paced, lots of info to remember, and it made it hard to focus on making one style

It was a great class. The instructor was a good teacher and extremely knowledgeable. She was able to adapt any ingredients people wanted or needed. The only reason I gave it four out of five stars and not five is that the class should be twice as long at least. There was so much information and preparation with a vegetable filling, a pork filling, making the dumpling wrappers, folding them and going over 3 different cooking methods. The teacher did stay in for as long as people needed to help. It should probably be a 4 hour or 2 part class so that the students can practice the techniques and processes the information. It could even be a whole series. The dumplings were fantastic and my whole family was happy, omnivores and vegetarians.

Some pointers/observations (for Eve, rather than the review):
1. The printed instructions were slightly different to the class itself. Being new to baking, we decided to plan ahead and get a few things ready such as the square pan. Eve used a large flat tray. It turned out not to matter but we quickly oiled a large baking tray before we discovered that the pan was fine!
2. We are in Colorado and it turns out that high altitude baking involves some tweaks to things like amount of water and oven temperature. Those changes weren't made during the class - or at least not until it was too late! Some clear guidelines on the print outs would have been very helpful and avoided some mistakes.
3. In between steps Eve talked about different breads and different ways to do things - great for someone with experience probably - but we would have preferred to focus on the job at hand - being complete novices.
4. We don't have a KitchenAid, just a Braun food processor. The capacity is limited to 2 cups of flour. Some clearer instructions about how the class would be run with or without a food processor would have been helpful eg "both breads can be made either by hand or in a processor - the class will cover both techniques". It is probably obvious to others but for some reason we weren't sure.

I learned a lot in this class! Even in a virtual setting, Eve was really hands on with each participant, and we managed to get a lot done in a short amount of time. Would definitely recommend!

The class was ok. I think more pre-instructions were needed. I assumed for an 1.5 class that the rice should have been cooked but the instructor cooked the rice during class using an instant pot. Well not everyone have an Instant Pot. Also many of the ingredients on the list was optional during class. That should be noted on the shopping list. Overall the class was good and I would recommend.

The class was great! Really nice cause we had a small group. It is not a beginner class. Definitely a great idea to have everything out and ready to go before joining. Eve was a great teacher. I ended up not using my mixer because it was hard to hear while the mixer was going. Would have been nice to be able to take a minute to use before moving on to the next piece. But because its an intense class I do understand why we had to keep moving. It was also nice to learn to make syrup and the almond cream in addition to the croissants. All-in-all it was a great class and nice to learn this skill virtually! I would take another class from Eve again.

Eve was an excellent instructor, the pasta came out great, and her sense of humor made the class a lot of fun. What I appreciated the most was all the helpful tips on not only the pasta making, but lots of other tips, too. Like how to chiffonade the basil, how to make garlic into a paste, and how to clean my pasta machine, among others. The only thing I would recommend for the course or Eve to be even more effective is for someone to review and update some of the pre-class information as it was a bit out sync with the actual class. However, it was not a problem as Eve was pretty flexible even if we did not have the exact same equipment, etc. I would recommend this class to anyone interested in a beginners pasta from scratch class. Thanks again Eve!

Eve is awesome. I would recommend this class to anyone with some existing kitchen skills. I would say that if you have most of the kitchen equipment asked for, then you can follow along with the class. Would have been useful to get a little more color on the size of bowls to use when (I don't have many bowls.) Otherwise I really enjoyed the class, learned a lot and made a delicious product. Also appreciate the resourcefulness that Eve employed with making value-added items along the way. Thank you!

The class itself was phenomenal. Clear instructions, good management when one participant was talking incessantly, and able to give good feedback over Zoom about what our dough/bread required.
The only issue was working with Coursehorse beforehand. When we bought the class, we received the ingredients list and the wrong recipe. I emailed coursehorse four or five times trying to get the correct recipe however never heard back. Having the recipe beforehand would have been very useful.
Don't change anything with the class, however add staff to monitor the email address given out so people can get the most of the class.

What a fun and rewarding experience! All from the comfort of my own home. Our teacher was through, patient and wildly generous with her culinary knowledge. Right down to teaching us us to correctly chop an onion! The pace was great, and there was plenty of time to ask questions. And, the completed meal was absolutely delicious!

This was a fantastic class. Chef Simon Herfray was the instructor and he did a wonderful job walking us through every step, answering all of our questions and was incredibly patient. Would take another class with Chef Simon in a heartbeat. And the bagels?? TO DIE FOR! My NY born and raised husband loved them. These will be a weekly bake for us!

I did this class with my daughters. We were suppose to be in different locations but ended up in my kitchen! The class moved fast, but there was time for questions and the outcome was amazing!
I would definitely recommend this class to others. Make sure you have everything needed washed, out and easy to grab!
We are going to continue with other classes as a way to get together as we all live in different states.

This class was so fun! I signed my 11 year old up and helped him prep all the ingredients to prepare. The instructor was great and the class had a smooth pace. He learned a lot of information about the differences between a cake donut and a yeast donut, how to use or not use the extra dough and why along with tips on how to adjust for altitude. Great class!

I thought the teacher was great and the information helpful. Having been furloughed for 2 months at that point I did not realize I would not have a 3 hour attention span so the bad is mine. Also, having to get up in the morning, presumably return to camera, and manage the success or failures and share with others first thing was beyond my abilities. I think that has little to do with the class itself or the lovely instructor, obviously. However, it might serve as a consideration to others interested in such a venture. I'd recommend this to friends zooming together for interaction with people with whom you identify or if you def have an attention span that can tolerate 3 hours of standing in your kitchen. I also might have had too much wine. Again, the instructor was great!

I took this class with my daughters. I really enjoyed the class and we ended up with some beautiful and delicious croissants at the end! My only caution to those thinking about the class is I would have a bit of baking experience behind me before taking a class such as this one. This is in no way a knock on the instructor - just that croissants are a bit more of an advanced baking item to make. If you have not really baked before and you started with croissants, you may struggle a bit in class. I could see a student struggling in my class and it was very apparent to me by the questions she was asking that she really had very little experience.

Eve was enthusiastic and certainly knows her way around the kitchen. I had hoped to learn a few new tricks to add to my approach to bagels. The technique Eve used is far too labor intensive for me. I manage to turn out a dozen pre 1960 Brooklyn bagels in a fraction of the time with a food processor but I did note that some of the participants did manage to get decent results so the course was helpful and of value to them. I appreciate Eve’s effort and in no way wish to give the impression that I was dissatisfied. I was impressed with her knowledge and ability to explain the chemistry without appearing like a pedant like me.

Chef Eve and the Croissant Making class was great! I had made croissants myself for the first time several months ago and they weren't amazing so I was looking for tips and tricks on how to make them better. This course provided me with that information and they croissants came out great. Looking forward to perfecting the recipe and perhaps trying another course with Chef Eve! Would love to try my hand at a Choux Pastry course if offered.

She was great. But it was FAST and if you got behind, you had to scramble to catch up. Not sure that you can make it any easier but to have everything ready in order that it will be needed in the order it will be needed. I didn't expect to heat butter in a pan to go with my yeast so never got the 2 tbs butter in the dough. I think the almond croissant part is too much. An additional 10 minutes in the beginning would help and the waiting time could be used to address questions. She definitely knows what she is doing and I would take a class again!

First of all, Eve was not the instructor. Apparently it was an apprentice, since Eve was online with us. The recipe and instructions did not match what the instructor was saying and several kept correcting her.
First comment..It said 'active dry yeast'....put that takes longer for it to work. She used instant yeast so she was way ahead of those of us with what we were told to have. switching back and forth between mixer and by hand just was difficult. One lady was smart and had her yeast prepared in advance and perhaps that would be a good thought from now on.
Second comment I would have is to have everyone make that butter filling in advance and have in the freezer/refrig. It says room temp butter-and then she said, well it should be cold, quick put it in the refrig or freezer. Well...it didn't get cold enough before she was moving on to the next step which then turned out to be very messy.
Perhaps the whole first step could be done in advance. And since we didn't have 30 min in between...things had to go into the freezer. My freezer/kitchen was a disaster after this! I finally quit after the first roll out and cut and went to bed -at 10:30. got up in the morning to roll and cut the other half...and to let rise. the ones that had been in the refrig overnight never rose, and the ones I did that morning did some...
Most disappointing were that these croissants were thick and heavy not flaky and nice like the ones you buy at a bakery. I was very disappointed in the whole event...and with the results. Sorry...
I am a baker. Have been all of my many years. Many of the other people said theirs didn't rise either. one lady did have great success and loved them. I saw in the comments section a question 'if you didn't fold as many times is that ok..like do one fold and then book'..Eve answered yes and I'd like to know if that would make them flakier. I have never seen a chocolate croissant like these. With all the layers they were dense...not light.

The class was good, though it felt a bit disorganized.... there were a few time that the instructor gave us wrong information. I have been baking for a long time and I can follow recipes fairly well but our Doug need it to be in the freezer 25 minutes. However, our instructor was going way too fast and I think most of the class ran behind. I think for your next class you should have the Doug prepare with the butter in the freezer for 25 minutes and make the strawberry jam Andreu take the Doug out to be out rolled again the be put it in the freezer and then do the almond paste. I think the monkey bread was a bonus but I wish we would’ve spent more time making our croissants. I do have to say that her instructor was very nice and I felt that maybe she was new at this, I think that she really does know what she’s doing and I think with time she will become fantastic. I will be signing up for the bagel class and maybe the donut class.

First time baking bread. So the class was too fast, while I was preparing the yeast for example, I didnt catch when i should put it in the recipe. When I was kneading the dough, instructor kept on saying it's too soft add more flour. (The yeast was added with the mixture too early.)
We were given a few minutes to put the mixture aside and it didnt rise. I put the mixture in the oven after instructor said it looked fine and it came out like a piece of stone.
Many times, she didnt hear me and it turned out I was muted.
My family wanted to take a look virtually how my bread turned out cause they watched me prepare for it. I was embarassed of the outcome - I threw both away.

Was a very enjoyable course. Eva was excellent and very encouraging and patient! The class does move quickly though and I think if the class could finish the last turn on the dough the first day and then the next day finish everything off in a 2 hour class I personally feel it would be better but the class would need to start around noon so the west coast people would not have to get up at the crack of dawn.

The only thing that I would add would be to include a list of what can be made with the two doughs that she taught. I decided to just watch because I thought the two doughs seemed so basic. I would have loved to see a rustic Italian or French round and sourdough. Seems like a different class. Still hoping for a babka class this summer.

My only issue is that although I thought the second class was at 10:30, I checked my receipt that morning and it said it was at 11 a.m., therefore I missed the beginning of the class. The instructor made it up to those of us who had that issue, which I appreciated.

I really enjoyed the class and picked up a few tips from Kelly. The only problem I had was you sent 3 different ingredient lists and 2 sets of instructions because of a change. Looking at them there was a miscommunication when making the frangipane or almond cream and because a couple of the lists had the frangipane and simple syrup ingredients mixed together as one cup of sugar, I added the one cup of sugar to the frangipane instead of 1/2 a cup of sugar to the simple syrup and 1/2 a cup of sugar to the frangipane. This made the almond cream too sweet and grainy.
Otherwise, Kelly was very enthusiastic and very helpful.

A cooking class that includes student participation is complicated in any setting. Teaching a cooking class online has many additional challenges, but I was very impressed with Chef Eve’s ability to teach, demonstrate AND answer questions during class. I got behind (frustrated) in my croissant-making process, so while others were baking, I was still prepping the dough. Chef Eve was still available to answer my questions and help me continue baking/learning so that I was able to complete the process successfully (i.e. several ugly but tasty butter and chocolate croissants as well as “monkey bread.”) I will be signing up for additional classes with Chef Eve. She’s got this down!! What a treat to have access to this during the quarantine!!

Chef Eve was patient and clear in her direction. A fountain of knowledge, she carefully explained the science and theory behind the technique and took the time to answer all manner of questions. Learning how to make croissants was a bucket list goal for me, and with Chef Eve’s assistance, I feel like I’ve nailed it.

My grandchild loved the class and made great donuts at his home.He's looking forward to making them again when in Vt. later in June.
I didn't find the recipe until after the program. For folks like me, I suggest making a point of checking for the recipe. I had assembled the necessary ingredients - that part was clear. My daughter who was working with my grandchild found everything she needed. So it was undoubtedly just me who had that problem.

I really enjoyed this class. The instructor explained very well how to make croissants. I followed her as she demonstrated how to
make the croissants and the ones I made turned out amazing. They looked so professional. I was really happy with the results.
As well, I did not have to ask a lot of questions. It was not hard keeping up with her. She was clear and repeated herself often in case we missed something. Truly worth the money spent and I would take another course with this instructor.

Several times. Could not get attention of teacher. Ingredients not consistent between receipe and what was said during class. Finally just stopped watching and looked up receipts in the internet. Eve was a great instructor, really patient and willing to answer any questions we had! She extended the class to answer any additional questions after the session.
I know virtual cooking classes are somewhat new due to the COVID-19 social distancing restrictions, but things that would have been helpful to consider for this class specifically are room temperature (we had issues with butter melting depending on where you were taking the class from and your local climate - perhaps next time that should be one of the suggested preparations - setting the AC/heat to a certain temperature so we were all in similar "climates". Also, it would have been great to do a split screen with one camera on the food, and one on the instructor's face so that we could see what she was doing while also able to see her talk. It was messy to switch between the two screens (especially with dough hands).
Overall, enjoyed the class and excited to try making croissants again!

I learned a few good points. I had technical troubles, so I couldn't access the second camera which made following some of the instruction difficult. I think if she were to draw it out on a piece of paper next time, it would be helpful for all those who couldn't access the second camera. I am grateful that she sent the recipes ahead of time. Over all the class was good.

The class could easily be taught in half the amount of time. People arrived late so we stopped to fill them in, people were at different steps along the way slowing us down, etc... Also, there were inconsistencies with the recipe provided and the way we prepared the dough in class. Teacher was patient and croissants were delicious. I would be hesitant to book again as the class went for 3 hours (instead of 2.5) on Saturday and could have been taught much more quickly.
