I enjoyed the whole process, we actually ground the wheat we used to make the dough, which was a first for me. The flavor of wholewheat bread made with freshly ground wheat is really good and the taste is so different from wholewheat bread you buy in a store. We had to take our dough home to bake (sourdough bread making is longer process so I knew we couldn't bake the dough we made in class, since it was a 3-hour class). We taste sampled bread that the instructor had made earlier and baked in class and he also made fresh butter - it was all delicious. We also got enough wheat berries and fresh ground wheat to take home make more bread, plus sourdough starter. The people in the class ranged from those who had never made any kind of bread before to some who had experience with sourdough. I thought the instructor was very good at explaining things to everybody and answering questions as they came up.
