Class Description

Description

Learn essential pie-making techniques with Stacey Mei Yan Fong, acclaimed author of the cookbook "50 Pies, 50 States." This class covers the fundamental skills required for successful pie baking: preparing homemade pie dough, creating flavorful fruit fillings, and assembling pies with professional finishing techniques, including lattice weaving and decorative crimping, and executing proper baking methods. Each student completes the course with their own finished pie ready to bake and share with friends and family.

This is the ideal time to refine your pie-making abilities under expert guidance. The class also includes fresh pie samples to taste and enjoy during the session.

  • Pie 101 Class

The class was fun, informative and supportive. It was so great to learn how to make a pie with the help of passionate bakers!
  • Pie 101 Class

I learned a lot from Abby. I really feel like my pies are going to be next-level when I bake for the holidays this year. She's incredibly knowledgeable and patient and kept dropping little nuggets of knowledge about food science and techniques that were so helpful! I would suggest having the recipe pre-printed so we can take notes during the class. I would definitely go back to learn from her again. The only reason for 4 stars instead of 5 was that two hours was a really short time for what we were doing. It was not clear in the class description that we wouldn't actually finish baking the pies. I would suggest three hours or have some of the prep already finished (like measuring out ingredients and peeling apples) or doing a different type of pie filling that doesn't require peeling and cutting (maybe something like blueberries?) so that the pie is completely finished at the end. I baked my pie today and it was DELICIOUS, but it looks a little funky because I had to travel by subway for an hour with the uncooked crust.
