Apollonia Poilâne, third-generation baker and owner of the bakery on the rue du Cherche-Midi that produces the most revered loaf in the world, sits down with award-winning writer and New York Times food columnist Melissa Clark to share stories and recipes from her first cookbook, POILÂNE: The Secrets of the World-Famous Bread Bakery.
Apollonia shares never-before revealed secrets to reproducing the venerable Parisian sourdough miche at home, along with recipes and tips for making the bakery’s other breads, tarts and pastries. And she reflects on her personal story of taking over a global business as an 18-year-old Harvard freshman, following the tragic death of her parents. A rare opportunity for a behind-the-scenes look at world-famous Poilâne and its sublime creations from the bakery’s CEO—a woman whose crib was made from … a breadbasket.

In the event that some or all of the meetings of the program cannot happen in person, programs will be held at the scheduled time in a virtual format via a video conferencing platform. The programs will continue through hands-on, at-home activities, lectures, presentations, and/or group discussions. No refunds will be issued should any portion of a course be held virtually.
We are not responsible for providing makeup classes or issuing refunds for programs missed as a result of illness, emergencies or other events beyond our control.
There are no refunds for outings, classes or workshops that meet fewer than three times per semester.

Refunds are computed from the date written notice is received. To receive a refund, you must enclose the original of your confirmation letter.
Please allow three to four weeks for processing of your refund request.
Processing fees, membership fees, auditions fees and class or exercise cards are not refundable. No cash refunds.
In any event where a customer wants to cancel their enrollment and is eligible for a full refund, a 5% processing fee will be deducted from the refund amount.
