What you'll learn in this culinary (meals) class:

A great lunch should be a delicious and healthful mid-point meal between breakfast and dinner, sustaining your energy and helping you avoid crashing in the second half of the day. 

Join our NGI chef for a full menu that will inspire you to make more satisfying desk lunches and less Standard American Diet meals. Whether you meal prep your lunches for the week or take leftovers from dinner, this class will give you the opportunity to learn how to make a variety of creative lunches with nutritious and wholesome ingredients.

Dishes we’ll cover:
  • Rainbow Vegetable Summer Rolls with Fresh Herbs and Quick Peanut Sauce
  • Avocado, Cucumber, and Black Sesame Nori Rolls with Flash Sautéed Seaweed Salad
  • Creamy Red Lentil and Cauliflower Bisque with Toasted Shredded Coconut and Chopped Cilantro with Warm Focaccia Squares
  • ‘BLT’ Sandwiches with Smashed Avocado, Crispy Mushrooms, and Tomato Jam
  • French Lentil Salad with Sun Dried Tomatoes, Fennel, and Haricot Verts

Q: What should I bring to class?

A: As always bring your good energy and enthusiasm for healthful cooking, and with any new experience we recommend bringing supplies to take notes. We provide aprons, side towels, knives, and all equipment.

Q: How should I dress?
A:
For cooking classes, we ask that you dress for safety. Please wear comfortable nice fitting clothing; shirts with sleeves and close-toed shoes or similar chef wear. Sleeveless shirts, open-toed shoes or sandals are not recommended in hands-on classes. Large accessories or bulky jewelry should not be worn. Long hair must be tied back.

Q: Do we get recipes to take home?
A:
In all our cooking classes we provide recipes for you to take home. For all our lectures, we provide the instructor’s handouts.

School Notes: NGI is open weekdays 8:30 a.m.-10 p.m. After 5:00 p.m. and on weekends, you must enter 200# onto the keypad just right of the glass doors to be buzzed into the building. Please take the elevator to the 2nd floor and check in at the front desk.

For single-session events or classes, students cancelling up to 48 hours before the start time are eligible for a refund (less a 10% processing fee) or a credit voucher (100% of purchase price). All refunds are subject to a 10% processing fee, up to $50 per class per person.*
